Cucumbers have become increasingly popular cocktail add ins, whether you use them as garnish, enjoy a cucumber infused vodka, or muddle them with herbs and sugar. Try these light, refreshing cucumber and vodka cocktails the next time you make drinks.

Cucumber Vodka Rickey

This cocktail is light, refreshing, and easy to make. It serves one.

Ingredients

  • 3 lime wedges
  • 2 ounces cucumber vodka
  • 5 ounces club soda or soda water
  • Ice
  • Mint sprig for garnish

Instructions

  1. In a collins glass or similar, squeeze the lime wedges and then put the wedges into the glass.
  2. Add the cucumber vodka, soda water, and ice.
  3. Garnish with a sprig of mint.

Cucumber Melon Ball

Cucumber is a type of melon, so it's not surprising that the flavors of cucumber pair well with the flavors of sweeter melons. This drink serves one.

Ingredients

  • Cucumber Melon Ball
    1 1/2 ounces Midori
  • 2 ounces cucumber vodka
  • 1/2 ounce simple syrup
  • Ice
  • Melon balls for garnish

Instructions

  1. In a cocktail shaker, combine the Midori, cucumber vodka, simple syrup, and ice.
  2. Shake to chill.
  3. Strain into a martini glass.
  4. Garnish with melon balls on a skewer.

Cucumber Mojito

Cucumber and mint are refreshing together, making this a delicious summer drink. It serves one.

Ingredients

  • Cucumber Mojito
    8 mint leaves
  • 1/2 ounce simple syrup
  • Juice of 1 lime
  • 2 ounces cucumber vodka
  • 2 ounces soda water
  • Unpeeled cucumber, cut into long thin slices using a vegetable peeler for garnish

Instructions

  1. In an old fashioned glass, muddle the mint leaves with the syrup.
  2. Add the lime juice, cucumber vodka, soda water, cucumber slices, and ice. Stir to mix.

Cucumber Cooler

This cocktail uses Champagne or a similar dry white sparkling wine, such as Prosecco or Spanish Cava. It serves one.

Ingredients

  • Cucumber Cooler
    1 long, thin strip of unpeeled cucumber (use a vegetable peeler)
  • 1 ounce freshly squeezed lemon juice
  • 1/2 ounce simple syrup
  • 1 ounce cucumber vodka
  • 2 to 3 ounces chilled sparkling white wine
  • Ice

Instructions

  1. Line the inside of an old fashioned glass with the unpeeled cucumber strip.
  2. In a cocktail shaker, stir the lemon juice, simple syrup, cucumber vodka, sparkling white wine, and ice until chilled.
  3. Strain into the prepared glass.

Pickle Juice and Vodka Shot Recipe

This recipe uses leftover pickle juice to create two 1.5 ounce shots.

Pickle juice and vodka shot

Ingredients

  • Garlic salt or celery salt
  • 1 1/2 ounces dill pickle juice
  • 1 1/2 ounces vodka
  • Ice
  • Lime for garnish (optional)

Instructions

  1. Wet the rim of two 1.5 ounce shot glasses and dip them in the celery or garlic salt.
  2. In a cocktail shaker, combine the dill pickle juice, vodka, and ice.
  3. Shake to chill.
  4. Strain into the prepared shot glasses.
  5. Garnish with lime if desired.

Variations

  • Use chili salt around the rim of the glass for a spicier shot.
  • For a smoky shot, use smoked salt around the rim of the shot glass.
  • Replace 1/2 ounce of pickle juice with 1/2 ounce of tomato juice.
  • Add a sprig of dill as garnish.
  • Add a dash of tabasco or hot sauce before shaking to chill.
